Spicy Pimento Cheese Cups

Easy, cheesy, spicy and SO good - these puff pastry cups with pimento cheese are amazing both warm or fully cooled.

Ingredients

  • ¾ cup cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup pimento peppers, chopped (about half a 4oz jar; see Note 1)
  • ¼ cup pickled jalapeño peppers, chopped (see Note 2)
  • ¼ tsp garlic powder
  • ¼ tsp Cajun seasoning (see Note 3)
  • ¼ tsp smoked paprika
  • ¼ tsp salt, or more to taste
  • ¼ tsp freshly cracked black pepper
  • 2 tbsp pickled jalapeño juice
  • 1 sheet frozen puff pastry, thawed

Instructions

  • Preheat oven to 400℉ (if you're using a silicone muffin tin, set aside a medium baking sheet to put under the muffin tin to avoid a mess in your oven)
  • In a bowl, combine the cream cheese, cheddar cheese, pimento peppers, jalapeños, garlic powder, Cajun, smoked paprika, salt and pepper
  • Mix until well combined
  • Roll out the puff pastry a little then cut into 12 equal-sized pieces
  • Place each piece of puff pastry in a muffin tin
  • Divide the cheese filling among the 12 puff pastry cups
  • Bake for 18-20 minutes or until the puff pastry is dark golden and crispy
  • Allow the cups to cool slightly before removing from the muffin tin
  • Serve hot, or allow to cool completely before serving

Notes

1. Pimento peppers are mild, sweet red peppers often found jarred. They're usually very easy to find in the United States, but can be hard to find in Canada. If you can't find pimento peppers, roasted red bell peppers are a perfect substitute. I could not find an Amazon link with a reasonable price, but will edit this in the future if I come across one.
2. If you don't like spice, reduce the pickled jalapeños by half or omit them altogether.
3. My favorite Cajun seasoning is Slap Ya Mama, but any other store-bought or homemade Cajun seasoning blend works great.
