Orange Ricotta Cookies

These cookies are light and fluffy with so much flavor, topped with a vanilla orange glaze that tastes like a creamsicle

Ingredients

  • 2 ¼ cups all purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 cup ricotta cheese
  • ½ tsp vanilla extract
  • Zest of 1 large orange (about 2 tsp)
  • 1 tbsp orange juice

Orange Vanilla Glaze

  • 2-3 tbsp orange juice
  • ½ tsp orange zest
  • ¾ cup icing sugar
  • 1 tsp vanilla extract

Instructions

  • In a medium bowl, whisk together the flour, baking powder and salt
  • In a large bowl, combine the sugar and softened butter and beat using an electric mixer or whisk until light and fluffy (around 2-3 minutes)
  • Add the egg and beat until smooth
  • Add the ricotta, vanilla, orange zest and orange juice and mix until combined
  • Add the dry ingredients to the wet ingredients and mix using a spatula until just combined (stop as soon as you can no longer see flour)
  • Allow the dough to chill in the fridge for at least 20 minutes to make it easier to scoop (the flavor gets better, too)
  • While the dough rests, make the glaze: whisk together 2 tbsp of orange juice, orange zest, powdered sugar and vanilla extract in a bowl until smooth; taste and add more orange juice if you want (see Note 1)
  • Preheat oven to 325℉/170℃ and line a large baking sheet with parchment paper
  • When the dough has chilled and thickened, use a small ice cream scoop or spoon to drop the dough onto the prepared baking sheet 2 inches apart
  • In 2 or 3 batches, bake 12 cookies at a time for 16-20 minutes or until puffed and lightly golden, rotating the pan halfway through
  • Transfer slightly cooled cookies to a wire rack and repeat with remaining dough, chilling extra dough in the fridge while cookies bake
  • Once the cookies have cooled, dip the top of each cookie in the glaze and return to the wire rack, or pour glaze over cookies
  • Allow the icing to set for 10-15 minutes or until hardened

Notes

1. I like a lot of orange flavor in the glaze. If you prefer a little less, start with 2 tbsp of orange juice and taste. You may not need the extra tablespoon of orange juice.
