Kimchi Fried Rice (20 Minutes and One Pan)

- ½ cup dry white rice, rinsed well
- Cooking spray or 1 tbsp avocado oil
- ½ cup kimchi, finely chopped
- 1 green onion, thinly sliced, white and green parts divided
- 2 cloves garlic, minced
- 1 tbsp gochujang (spicy or mild both work great; see Note 1)
- 1 tbsp kimchi juice from the jar
- 1 tbsp water
- 1 tsp toasted sesame oil
For Serving
- Black and white sesame seeds, to garnish
- Shredded seaweed, to garnish
- Fried egg, optional
Cook the rice in a rice cooker or on the stovetop; if possible, cook it a few hours in advance and leave it uncovered in the fridge (for fresh rice, spread it flat and let it dry as much as possible before using)
Heat a large skillet or wok over medium-high heat then spray with avocado oil cooking spray
Sauté the kimchi and the whites of the green onion for 3-4 minutes, then add the garlic and sauté for another minute
Reduce heat to medium and add the rice, gochujang, kimchi juice and water then stir until combined
Cook for 7-8 minutes or until the liquid is absorbed and the rice is fluffy with distinct grains and no clumps
Turn off the heat and mix in the toasted sesame oil and the green parts of the green onion
Serve topped with sesame seeds and shredded seaweed
Note 1: Gochujang is a fermented Korean chili paste. The flavor is a mix of spicy, sweet and tangy. You can find it on Amazon or in Asian supermarkets. I prefer the spicier variety, but a mild variety is available and works great for this recipe if you don’t like spice.
