Equipment

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • ½ tsp vanilla extract
  • ¾ cup ube flavored condensed milk (see Note 1)
  • 1 large egg
  • ¾ cup coconut oil, melted and slightly cooled

Instructions

  • Preheat oven to 350℉/180℃ and line a large baking sheet with parchment paper
  • In a medium bowl, whisk together the flour, baking powder and salt and set aside
  • In a separate bowl, whisk together the sugar, vanilla extract, ube condensed milk, egg and coconut oil until smooth
  • Add the dry ingredients to the wet ingredients and mix until just combined (stop as soon as you can no longer see flour)
  • Chill the dough for 15-20 minutes to make it easier to scoop
  • Using an ice cream scoop or large spoon, place the dough on the baking sheet, 2 inches apart (cookies will spread a lot)
  • Bake for 11-12 minutes or until edges are lightly darkened
  • Allow to cool slightly then transfer to a cooling rack

Notes

1. I used Jersey brand ube flavored condensed milk. You should be able to find it at any Asian grocery store.
