baking powder

salt

granulated sugar

vanilla extract

ube flavored condensed milk

large egg

coconut oil,
melted and slightly cooled

Instructions
Preheat oven to 350℉/180℃ and line a large baking sheet with
parchment paper
In a medium bowl, whisk together the flour, baking powder and salt and set aside
In a separate bowl, whisk together the sugar, vanilla extract, ube condensed milk, egg and coconut oil until smooth
Add the dry ingredients to the wet ingredients and mix until just combined (stop as soon as you can no longer see flour)
Chill the dough for 15-20 minutes to make it easier to scoop
Using an ice cream scoop or large spoon, place the dough on the baking sheet, 2 inches apart (cookies will spread a lot)
Bake for 11-12 minutes or until edges are lightly darkened
Allow to cool slightly then transfer to a cooling rack
Notes
1.
I used Jersey brand ube flavored condensed milk. You should be able to find it at any Asian grocery store.
