Protein Pancake Bowls (Easy 5 Minute Meal Prep Recipe)
Equipment
- 1 whisk or spatula
Ingredients
- Avocado oil spray
- ½ cup cottage cheese, 1% or 2%, blended until smooth (see Note 1)
- 1 large egg
- â…“ cup milk (I use 2%, but any kind works great)
- 2 tbsp plus 2 tsp all purpose flour
- ½ tsp baking powder
- ½ scoop vanilla protein powder
- 1 tsp vanilla extract
- Fruits of choice such as blueberries, bananas or strawberries (see Note 2)
- Maple syrup or sugar free pancake syrup, for serving
Instructions
- Preheat oven to 350℉
- In a medium mixing bowl, whisk together all ingredients until smooth
- Spray an oven safe container with cooking spray then pour in the batter (see Note 3)
- Top with fruits of choice
- Bake for 35-38 minutes or until a toothpick inserted in the center comes out with a few moist crumbs
- Serve warm topped with a little maple syrup and store in the fridge for up to 1 week
