Protein Pancake Bowls (Easy 5 Minute Meal Prep Recipe)

These quick and easy protein pancake bowls are as soft, fluffy and cakey as classic pancakes, but they pack 38 grams of protein each.

Equipment

Ingredients
 
 

  • Avocado oil spray
  • ½ cup cottage cheese, 1% or 2%, blended until smooth (see Note 1)
  • 1 large egg
  • â…“ cup milk (I use 2%, but any kind works great)
  • 2 tbsp plus 2 tsp all purpose flour
  • ½ tsp baking powder
  • ½ scoop vanilla protein powder
  • 1 tsp vanilla extract
  • Fruits of choice such as blueberries, bananas or strawberries (see Note 2)
  • Maple syrup or sugar free pancake syrup, for serving

Instructions
 

  • Preheat oven to 350℉
  • In a medium mixing bowl, whisk together all ingredients until smooth
  • Spray an oven safe container with cooking spray then pour in the batter (see Note 3)
  • Top with fruits of choice
  • Bake for 35-38 minutes or until a toothpick inserted in the center comes out with a few moist crumbs
  • Serve warm topped with a little maple syrup and store in the fridge for up to 1 week

Notes

Note 1: You can also use ½ cup of non-fat Greek yogurt instead of cottage cheese.
Note 2: Use any fresh fruits of your choice for this recipe. My favorites are blueberries, strawberries and bananas. You can also use frozen fruit here, just make sure to thaw it and pat it dry before using.
Note 3: You can also mix each serving directly in the container you’re baking it in but I find it sticks so I prefer to mix separately and spray the dish with a little avocado oil.
