Easy Ube Cookies
These cookies are made with ube flavored condensed milk; they're so chewy and full of flavor, and so easy to make.
Equipment
Ingredients
- 2 cups all purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup granulated sugar
- ½ tsp vanilla extract
- ¾ cup ube flavored condensed milk (see Note 1)
- 1 large egg
- ¾ cup coconut oil, melted and slightly cooled
Instructions
- Preheat oven to 350℉ and line a large baking sheet with parchment paper
- In a medium bowl, whisk together the flour, baking powder and salt and set aside
- In a separate bowl, whisk together the sugar, vanilla extract, ube condensed milk, egg and coconut oil until smooth
- Add the dry ingredients to the wet ingredients and mix until just combined (stop as soon as you can no longer see flour)
- Chill the dough for 15-20 minutes to make it easier to scoop
- Using an ice cream scoop or large spoon, place the dough on the baking sheet, 2 inches apart (cookies will spread a lot)
- Bake for 11-12 minutes or until edges are lightly darkened
- Allow to cool slightly then transfer to a cooling rack
Notes
1. I used Jersey brand ube flavored condensed milk. You should be able to find it at any Asian grocery store.
