Chocolate Crinkle Cookies
Crispy around the edges and gooey in the middle – these fudgy, chocolatey cookies are super easy to make and taste like a little ball of hot chocolate.
Equipment
Ingredients
- 1 cup all purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup plus 2 tbsp granulated sugar
- ½ cup unsweetened Dutch processed or regular cocoa powder (see Note 1)
- ¼ cup avocado oil, or other neutral oil such as canola, sunflower or peanut oil
- 2 large eggs
- 2 tsp vanilla extract
- ¼ cup powdered sugar
Instructions
- In a medium bowl, whisk together the flour, baking powder and salt and set aside
- In a large bowl, whisk together the sugar, cocoa powder and avocado oil until smooth and glossy, and no lumps of cocoa powder remain
- Add the vanilla extract and eggs and whisk until combined
- Add the dry ingredients to the wet ingredients and mix until just combined (stop mixing as soon as you can no longer see flour)
- Cover and refrigerate for at least 30 minutes to overnight
- Preheat oven to 350℉/180°C and line a large baking sheet with parchment paper (see Note 2)
- Add the powdered sugar to a medium bowl
- Using your hands, roll the dough into about 12-14 equal sized balls; when rolled, toss them into the bowl containing the powdered sugar (the dough gets very sticky so this is easier than setting them aside on a plate)
- After about 3-4 balls of dough, toss them in the powdered sugar and ensure they are well coated
- Transfer coated dough balls to the prepared baking sheet, about ½ an inch apart (they will not spread much so they can be fairly close together)
- Bake for 10-12 minutes until the powdered sugar has a crinkled look and the tops look lightly crispy and no longer soft
- Allow to cool slightly before transferring to a wire rack or large plate to cool completely
Notes
1. Dutch processed cocoa powder will give the cookies a richer, more chocolatey flavor, but either option works great!
2. This recipe makes a fairly large amount of cookie dough, so you may need to use two baking sheets or bake them in two batches.
