Once you’ve tried this recipe, you’ll see that it went viral for good reason; it’s absolutely phenomenal. It’s a very approachable and easy recipe to recreate so you can have the chance to taste a traditional dish using methods and ingredients that are much easier to use in a home kitchen.
Doner, or döner, is a traditional Turkish dish that’s made by roasting seasoned meat on a vertical rotisserie. It’s typically served in two ways; Iskender, over rice or pita bread and covered in tomato sauce, or as a wrap style sandwich with simple toppings.
My take on this recipe combines soft, fluffy flatbread with tender, lightly charred seasoned beef, a quick and delicious lemon herb garlic sauce and a few simple toppings to create an absolutely delicious sandwich you’ll be wanting to make again and again. The steps for this recipe are straightforward and easy to follow. Rolling the meat super thin takes the longest, but the process is very simple. And trust me, it’s definitely worth it.

Oven Baked Doner Kebab Wraps (Easy Viral Recipe)

Ingredients
Doner Kebab
- 1 small onion, quartered
- 1 lb lean or extra lean ground beef (see Note 2)
- 3 tbsp Greek yogurt (I use fat free, but any percentage works great)
- 2 tsp smoked paprika
- 1 tsp Aleppo pepper (you can also use a Turkish kebab spice blend; see Note 3)
- 1 tsp sumac
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp freshly cracked black pepper
- 1 tsp salt
- ½ tsp cumin
Lemon Garlic Herb Sauce
- 1 cup Greek yogurt (I use fat free, but any percentage works great)
- Juice of 1 large lemon (about ¼ cup)
- 3 tbsp fresh parsley, finely chopped
- 1-2 cloves garlic, grated or crushed
- Freshly cracked black pepper, to taste
- Salt, to taste
For Serving
- 4 flatbreads, pita or lavash
Toppings (Optional)
- 1 tomato, halved and sliced
- 1 small red onion, thinly sliced
- ½ tsp sumac (for the onions)
- â…“ cup feta cheese, crumbled
- 1 cup green cabbage or lettuce, thinly shredded
Tomato-Cucumber Salad
- 1 English cucumber, finely diced (or 8-10 Persian cucumbers)
- 1 tomato, diced
- ¼ cup fresh parsley, finely chopped
- Juice of 1 large lemon (about ¼ cup)
- 2 tbsp extra virgin olive oil
- 1 tsp Sumac
- Salt, to taste (about ½ tsp)
Instructions
Doner Kebab
- In a food processor or by hand using a box grater, finely shred or grate the onion
- Add the beef, spices and yogurt and blend until well combined (if you used a box grater for the onion, you can add the ingredients to a mixing bowl and mix by hand)
- Preheat oven to 400°F and prepare 8 large sheets of parchment paper
- Divide beef mixture equally among 4 sheets of the parchment paper
- Using a second sheet of parchment paper and a rolling pin (or by hand), press the beef flat and roll until very thin and almost the full size of the parchment paper
- Starting from one end, fold parchment tightly into rolls and place on a medium baking sheet
- Bake for 10 minutes, then remove from the oven and drain the fat on the baking sheet
- Return to the oven and bake for 10 more minutes
- Carefully unroll the parchment paper sheets and lay out the beef
- Broil for 1-2 minutes until crispy and lightly charred
- Chop or tear into smaller pieces of desired size
Lemon Garlic Herb Sauce
- While the beef is in the oven, mix together the yogurt, lemon juice, parsley, garlic, salt and freshly cracked black pepper until combined then set aside
Tomato-Cucumber Salad
- While the beef is in the oven, toss together the cucumber, tomato, parsley, lemon juice, extra virgin olive oil, sumac and salt then set aside
To Assemble
- In a small bowl, mix the sliced red onion with the sumac
- Spread lemon garlic sauce on flatbread, top with beef, sumac onions, tomatoes and other toppings of choice then roll tightly and slice in half
- Serve with Tomato-Cucumber Salad and extra Lemon Garlic Herb Sauce for dipping
