Easy Homemade Tortilla Chips

Crispy, golden fried homemade tortilla chips are so quick and easy to make with only 3 ingredients and way better than store-bought versions.

  • 10 corn tortillas, cut into sixths or eighths
  • 2 cups neutral oil, for frying (see Note 1)
  • Salt, to taste

Instructions
 

  • Stack and slice the tortillas halfway, then into sixths or eights depending on desired size (see Note 2)
  • Add the oil to a large shallow pan with high sides like a sauté pan and heat over medium heat until shimmering (see Note 3)
  • Fry tortillas in batches of 2-3, ensuring the pan is not overcrowded, until golden and crispy; about 2-3 minutes (see Note 4)
  • Using a spider strainer or metal tongs, transfer chips to a paper towel lined plate or bowl and season lightly with salt to taste, or leave them unsalted if you prefer

Notes

1. Any neutral oil with a high smoke point is great for this recipe, such as avocado, canola, vegetable or peanut oil.
2. If possible, leave the tortillas on the counter to dry out for about an hour before frying. This is totally optional, but helps create crispy bubbles because the edges of the tortillas will start to separate as they dry.
3. Your oil is ready to fry when it shimmers, but it’s always best to check to be sure with a chopstick or thermometer. If you place one end of a chopstick in the oil and it bubbles lightly, it’s ready to go. If you’re checking with a thermometer, it should be between 350℉ and 375℉ and no hotter.
4. The tortilla chips can also be air fried instead of shallow fried: simply brush them lightly on both sides with oil (or spray them with avocado oil cooking spray) and air fry at 375℉ for 8-10 minutes or until golden and crispy, flipping halfway.
